Assimilation is a phonological process in which a sound in pronounced in a way that makes it more similar to some other sound in its environment. For example, the alveolar consonant [n] in the middle of the English word 'bonbon' might be pronounced as a bilabial consonant [m], because that makes it more similar to its neighbor [b], which is bilabial.
